‘Eggs in a basket’ breakfast sandwich
This is the perfect, easy breakfast with only 4 ingredients. 😀 Great for when you’re trying to lower carbs but still eat sandwiches! There is a video recipe at the bottom to help you! Other ingredients to include are cheddar, goats cheese, spring onion, spinach, rocket, beetroot, onion, smoked salmon or bacon!
2 slices rye bread
3 slices tomato
Use a cookie cutter to cut circles out of the centre of the slices of bread. Place the bread in a non-stick pan over medium heat and crack the eggs into the centre of each hole. Cook for a few minutes then flip. Top with tomato & avocado and cook for a few more minutes (until the yolk is at desired hardness). Place them on top of each other and cook for another minute until the tomato/avocado are hot. Enjoy!
