30 minute Thai red chicken curry
Ive been planning on making a red or green Thai chicken curry, and finally got around to it. I’ve never seen Thai basil in the supermarket before, but as a strange coincidence I found it for the first time ever today while shopping! (So this recipe was definitely meant to be ;).) Thai basil is pretty similar in flavour to normal basil, so feel free to replace it with plain basil if you can’t find it. 🙂 I chose to use a store bought red curry paste rather than making my own, but theres plenty of recipes online if you would prefer to make your own! This recipe serves approx 3-4 people, with rice or noodles.
1 chicken breast (can use firm tofu for a veg version)
2 tablespoons Thai red curry paste (use less if you don’t like the spice)
400ml can light coconut milk
1/3 cup fresh Thai basil (or plain basil)
1/3 cup bamboo shoot
2 teaspoons fish sauce
1 tablespoon brown sugar
1/2 cup low-sodium chicken stock
1 cup mushrooms
1 large green capsicum (green bell pepper)
1/2 brown onion
Heat a large saucepan to a medium heat, add the Thai red curry paste and coconut milk, and sauté for 5 minutes. Finely dice the onion, capsicum, and mushrooms, and thinly slice the Thai basil and chicken breast. Heat a frypan to a medium heat, add the olive oil, capsicum and onion and sauté for 5 minutes. Set the capsicum and onion mixture aside in a bowl, and add the chicken to the frypan. Lightly season with pepper and cook until done. While the chicken is cooking, add the thai basil, bamboo shoot, fish sauce, brown sugar, chicken stock and mushrooms to the saucepan with the coconut milk mixture. Once the chicken is cooked through, add the chicken, onion and capsicum to the saucepan with the curry, and stir until well combined. Allow to cook for a few more minutes and then remove from heat. Serve with steamed basmati rice.
Notes: if you can be bothered, you can make your own thai red curry paste, otherwise just look at the ingredients of the supermarket brands and pick the best 🙂
